Lemon Cupcakes



Ingredients:

Makes 24 cupcakes

1 box white cake mix
2/3 cup frozen lemonade, thawed
8 ounces sour cream
3 ounces cream cheese, softened (microwave for 15 secs)
3 eggs

FROSTING:
1/2 cup margarine
3 ounces cream cheese, softened (microwave for 15 secs)
6 cups confectioners sugar
21/2 tablespoons lemon juice
½ tsp salt

Procedure:

Preheat the oven to 350.
Combine the cake ingredients until the mixture is smooth.
Pour about ¼ cup of batter into cupcake liners.
 Bake 24 minutes.

Frosting
Combine margarine and cream cheese, mix well.
Pour the powdered sugar, lemon juice, and salt until well combined.

Frost the cupcakes using a spatula or a piping bag.
