Yummy Smore's Chocolate Cupcakes













Ingredients:

2 cups sugar

1 3/4 all purpose flour
3/4 cup unsweetened cocoa (generic brand is fine)
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
3 eggs
1 cup whole milk
1/2 cup vegetable oil
2 tsp vanilla extract

Procedure:


Heat oven to 350 F

In a large bowl, mix dry ingredients (sugar, flour, cocoa,baking powder,baking soda, and salt)
In a separate medium bowl, whisk egg, milk, oil and vanilla. Then add 3/4 cups of hot water.
Pour into the flour mixture and mix well.
Fill cupcake liners to 3/4 cup.
Bake for 24 minutes.

FROSTING:



  • 2 egg whites
  • 2 tbsp butter
  • 1 cup sugar
  • 1 tbsp corn syrup
  • 1/2 tsp cream of tartar
  • 1 cup mini marshmallows
  • 1 tsp vanilla extract
  • 6 tbsp water


Procedure:

Combine all ingredients in a large bowl. Mix well using a wire whisk.
Heat butter and marshmallow in a low heat saucepan. Constantly stir it until it's all melted.
Add the egg mixture and continue stirring until well combined and smooth.
Place frosting in a piping bag. Frost cupcake using Ateco 809 tip.
